Keto tiramisu has been on my list to make for quite a while but I wanted to make sure the replacement for the lady finger cookies was similar or better. I decided to use my Low Carb Amaretti Cookies for this recipe as they are similar in texture to a lady finger but sugar free." player-type="collapse" override-embed="true"]

These mini tiramisu cups have layers of creamy mascarpone mixed with egg yolks and sweetener until smooth and luscious.

Ingredients used to make these tiramisu cups

Creamy ingredients layered with the low carb amaretti cookies. You will love these Italian tiramisu cups.

  • Low Carb Amaretti Cookies: traditionally Italians will have amaretti cookies on special occasions like weddings and baptisms, we made these cookies specifically for these tiramisu cups recipe.
  • Mascarpone cheese: often compared to cream cheese but sweeter and less tangy.
  • Egg Yolks: mixed with powdered erythritol and folded right in with the mascarpone cheese to make a creamy filling.
  • Erythritol: this is my favorite sweetener as I find it is the closest sweetener to sugar and as a type 2 diabetic it does not seem to spike my blood sugars.
  • Cocoa Powder: a layer of unsweetened cocoa powder gives this creamy dessert a chocolatey finish.
  • Espresso: adds some moisture to the cookies and balances out the sweetness from the mascarpone cream mixture.

Steps by step instructions

How to make Tiramisu Cups?

STEP 1: Using a double boiler over low heat, add the yolks and sweetener and whisk them together for about 8-10 minutes until the mixture is smooth and creamy. Don't worry if it clumps up, it will smooth out.

Remove from heat and allow to slightly cool.

STEP 2: using an electric hand mixer whip the heavy cream until stiff peaks form.

STEP 3: combine the mascarpone with the yolk mixture and then gently fold in the whipped heavy whipping cream.

STEP 4: for the cups, I used individual tiramisu cups that I had when I purchased the Costco tiramisu cups years ago.

STEP 5: to layer the tiramisu cups first dunk an amaretto cookie for about 10 seconds into the espresso and then crumble the cookie into the bottom of the cups. Drizzle a teaspoon of espresso over the crumbled cookie and then add a layer of the mascarpone cream mixture.

STEP 6: add another crumbled espresso-soaked amaretto cookie and another layer of the espresso cream, then top with a sprinkle of the unsweetened cocoa powder. Cover each individual tiramisu cup with plastic wrap and let set in the fridge for 24 hours before serving.

Top Tip: for best results allow the tiramisu cups to rest in the fridge for 48 hours before consuming.

  • Serving: store covered with plastic wrap in the fridge for up to 3 days.
  • Storage: store the pie covered in plastic wrap in the fridge for up to 4 days

Recipe variations

Tiramisu has super creamy and delicious, here are a few different ways you can make this low carb dessert.

  • Cake - If you want to use a glass dish instead, layer the dunked amaretti cookies in the bottom of the dish, layer with cream mixture, another layer of dunked cookies and a layer of the cream mixture, then dust with cacao powder.
  • Fruit - add a few slices of strawberries or raspberries to each individual tiramisu cup for some added natural sweetness.
  • Espresso Powder - for a more intense coffee flavor mix some espresso powder with the cocoa powder.

Traditionally some tiramisu recipes contain alcohol like coffee liqueur, marsala or rum but for this recipe, we left the alcohol out.

What does tiramisu mean?

Instructions

  • Using a double boiler over low heat whisk the 4 egg yolks and sweetener, and keep whisking for about 8-10 minutes until the mixture is creamy and smooth. Once smooth take off the heat and allow it to cool.

    4 large egg yolks, 4 tablespoon powdered sweetener sugar substitute

  • With an electric hand mixer, whip the heavy cream until stiff peaks form.

    1 cup 35% heavy whipping cream

  • Combine the mascarpone with the egg/sweetener mixture. Using a spatula combine until smooth.

    1 cup mascarpone cheese

  • Fold in the whipped cream, try not to flatten the cream, instead fold in from the centre and out to the edges of the bowl. (see video).

  • I used 4 oz glasses to make 6 individual portions.

  • Dunk an amaretti cookie into the coffee, let it swim for 10 seconds and then take out.

    12 Low Carb Amaretti Cookies, 1 cup espresso

  • Crumble the espresso soaked cookie and fill the bottom of the glass, drizzle a teaspoon of coffee on top of the crumble, then top with cream mixture

  • Dunk another cookie into the coffee, crumble and then drop it into the glass and top with more cream mixture.

  • Dust with cacao powder

    unsweetened cocoa powder

  • Cover each individual tiramisu cups with plastic wrap and store in the fridge 24 - 48 hours before serving.
