  • Corn Muffin Mix

  • 23 cup all-purpose flour
  • 12 cup yellow cornmeal
  • 13 cup granulated sugar
  • 1 tablespoon baking powder
  • 12 teaspoon salt
  • 2 tablespoons vegetable oil
  • To make muffins add

  • 1 egg
  • 13 cup milk
  • Optional Ingredients

  • 12 cup grated cheddar cheese (optional)
  • 2 ounces canned chilies (optional)
  • 14 cup drained chopped pimiento (optional)
  • 12 cup chopped onion (optional)

  • Combine first 5 ingredients in a bowl, mix well.
  • Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.
  • If another recipe is calling for a box of Jiffy Corn Muffin Mix, add the above mixed ingredients to that recipe.
  • To make Corn Muffins, preheat oven to 400F, spray muffin pan with non-stick cooking spray.
  • OPTIONAL: To mix, add any combination of optional ingredients you prefer.
  • Combine mix with egg and milk, mixing well.
  • Fill muffin pan 1/2 full, bake for 15-20 minutes.

  4. Newbie here. Re read recipe for Jiffy corn muffins several times.... Can't locate temp to bake them... am I missing something? TY aqhead of time for any help... My sisters 70th BD tomorrow and she LOVES these... Do I use my normal Southern Corn Muffin recipe temp? Not sue... and... what makes them so sweet out of the box? I see no sweetener added? :)

  1. I loved the simplicity of this recipe, it was almost as easy as using a box of Jiffy...seriously! I think next time I will use melted butter instead of the oil just to add a little more flavor because why not!! Everything is better with butter, right?!

  2. WOW, tasted just like the real thing. Can make it as sweet as you want it by adusting the sugar. I made this tonite cuz I was out of the Jiffy box mix. Won't be using that anymore! Served with #87433, WW Texas Chili over brown rice.

  3. I got tired of the cost of cornmeal and cornmeal mixes rising, so I got popcorn kernels, and I started to mill them myself at home. The first time I made this recipe, it turned out a bit dry, so I lowered the flour from 2/3C to 1/2C, and it turned out perfect. My husband eats it obsessively. ??

  4. I have made this multiple times now, to answer how much for a 9x13 I personally triple the recipe.. And for that I use 3/4 c sugar also.. The milk needs to be increased for the recipe by a quarter cup (for single batch).. Over all good though =)

  5. Excellent! 5 star rating from me! I don't know if this recipe yields 6 LARGE muffins, but a box of Jiffy very generally yields 12 regular sized muffins for my aunt. I rarely use Jiffy mix, but I will use this copycat when my brother visits. He LOVES Jiffy cornbread. I will be baking another batch, I usually sprinkle the tops with sugar prior to baking.

  1. Instead of milk I added sour cream instead of salt I added lemon pepper. Delicious! This is my second time using this recipe and each time it turned out scrumptious!

  3. I have used your recipe for years, as I make all we eat from scratch. My husband, a devoted Jiffy lover, was won over the first time. I use fresh ground sprouted wheat, masa corn flour, and stevia for the flour, cornmeal, and sugar. The only major change has been the need to increase the water amount (I always eye-ball it)-- then it bakes up beautifully. Today I had to make it egg and dairy free so I subbed bacon grease for the oil, coconut milk for the milk, and 1Tbl ground flax and 3Tbl water for the egg. Again, it was scrumptious. Thank you for posting.

  4. I made this, but I used 2/3 cup of cornmeal and 1/2 cup of flour. I also used 2 TBS melted butter, and 1 tsp of veg oil. I used turbinado sugar instead of white and I cooked it in a small casserole dish preheat with bacon grease in the bottom and cooked for 28 mins

Hi .. The pic is of my beautiful son, born on 2/5/2005. His name is Tariq, meaning Bright Star. As I type this, he is blowing bubbles in his water cup and watching cartoons. He whined to get this water for 15 mins and now he won't drink it, he will only play with it.
