"A delicious whole grain bread which is also great for people who can not tolerate wheat. Spelt flour can be found at Health food stores, I use Vita Spelt and I have them order a twenty-five pound bag for use in all of my baking. I got the original recipe out of a friends "Breadman" cookbook, but I have modified it slightly over the years."

- 1 1⁄4 cups water (warm for rapid setting)
- 1 1⁄2 teaspoons salt
- 2 tablespoons canola oil
- 3 tablespoons honey
- 3 1⁄2 cups whole grain spelt flour
- 1 3⁄4 teaspoons bread machine yeast

directions
- Put the ingredients into your machine in the listed order.
- Choose setting on bread machine: light crust, 1.5 pound loaf, either the rapid wheat or whole wheat settings work just fine, depending on how much time you have. After the flour has been added, make a depression in the flour to hold the yeast until mixing begins.

Clearly it works with your machine, but I worry about the delicate gluten structure of spelt in mine. Do you know how long your kneading cycle is?

I used 1/3 white organic flour. Only 2 Tbs of Organic honey and 1/4 less yeast and a tsp of vit. C powder. Came out nice and soft and not too sweet. I used the fast bake setting.

I took advice of Kim M and used 2 cups spelt and 1.5 cups plain flour. Instead of baking a loaf of bread, I divided it into 12 rolls before letting rise the second time. My bread maker makes funny shaped bread! Brushed with egg white and added poppy seeds or sesame seeds on each roll. Baked for 20 minutes at 400. Might change to 375 next time as they got a little browned but delicious!

I used 1 cup Kodiak protein flour with the 2 cups spelt and it came out perfect - soft spongey yummy (with higher protein) & very filling.

I made this exactly as is but didn't have canola oil so substituted avocado oil instead. I pulled out my 26 year old Black and Decker bread machine and set it up to work overnight. A beautiful tender loaf greeted me when I woke up. My teenagers love the taste of this bread. I had no bloating after eating it as I typically do after eating white or whole wheat bread. Tasty and nutritious!

I used 2 cups spelt and 1.5 cups plain and it was absolutely the most delish bread I've ever made. Perfect consistency, light and moist inside.<br/><br/>I'll use this recipe over and over!

We use a mixture of equal parts chia, ground flax, ground almond, ground raw pumpkin seeds and hemp in our morning smoothies, so I substituted 1/2 cup of the spelt flour for the seed mixture and used coconut sugar instead of honey - on rapid bake and it was awesome!

Using freshly ground spelt flour and a mini Zoji bread maker, I used 1/8 cup less water and 2 1/4 TBSP butter instead of oil for a perfect loaf.
