Hello again! It’s Olivia here. One of the best things about summer in Ontario are the fresh, beautiful Niagara peaches available in abundance.

Fresh or frozen peaches both work well in this simple recipe idea.

These peaches that I speak of are a hot commodity back in Newfoundland. It’s not uncommon for Ontario folk to bring some along for friends when visiting the island.

Now that we are approaching the height of peach season, I’d like to share this beautiful torte recipe, one of my favourite go-to easy desserts. It’s actually inspired by the famous New York Times Plum Torte, with a few additions I deem essential.

Peach wedges for Peach Torte.

It’s an incredibly simple recipe that can be thrown together in one bowl, baked and ready in just about an hour.

I absolutely love the versatility of this Peach Torte. You can really use any fruits you like, but I would stick to what’s in season. Berries, fresh apricots or pears would all be great choices.

Another favourite trick of mine is to bake this Peach Torte in a cast iron skillet. It makes for a crispy, buttery crust and a beautifully rustic presentation.

You can simply put the warm skillet on a cloth on the dining table and serve from there. A dollop of cream doesn’t hurt, either.

Easy Peach Torte. This simple torte is a one-bowl, lightly spiced buttery cake showcasing late summer peaches, or any other seasonal fruit you like. It is a truly no-fuss dessert best served warm with a dollop of cream.

Ingredients

  • 1/2 cup softened butter
  • 3/4 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp baking powder
  • pinch of salt
  • 2 cups fresh peaches, sliced
  • 1 tbsp turbinado sugar (or another coarse sugar), for sprinkling

Instructions

  1. Preheat oven to 350 F. Grease a 10-inch skillet with butter.
  2. In a medium-sized bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs and vanilla.
  4. Add the remainder of the dry ingredients and fold in until the batter is just smooth.
  5. Spread the batter evenly into the prepared skillet. Arrange the sliced peaches on top.
  6. Bake for about 40 mins, until a toothpick comes out clean and the torte is a light golden brown colour.

Notes

Feel free to use whichever seasonal fruits you like - berries, plums, apricots and pears are all lovely choices.
